Cheese Dreams

When I first started to cook as a child, I received a cookery book entitled My Fun to Cook Book. This wonderful cookbook inspired me to try out all kinds of recipes and my Mum was very relaxed because at the point of any heat being needed there was the excellent exhortation "Call Mother"! "Call Mother" became a catchword in our family for any situation when Mum was required!

Anyway, I cooked many, many cakes and savoury treats from this book, and still do to this day. One of the enduring favourites which I have recently started making again is Cheese Dreams. These are very simple cheese sandwiches fried in a drizzle of olive oil. Many ingredients can be added to the cheese including marmite, tomatoes, onions, chutney, mustard and much more. We tend to stick to a simple cheese and onion sandwich. My Mum's favourite was cheese and marmite accompanied by a bowl of minestrone soup, of course, this was the 1970s!


I still have My Fun to Cook Book, as well as the less used My Learn to Cook Book. After making Cheese Dreams at the weekend I was inspired to find them and indulge in a spot of nostalgia. I had completely forgotten about favourites such as Peanut Butter Cookies, Upside Down Cakes, Quick Mix Fruit Cake and  Raspberry Buns.
